Pickled Cauliflower

Ingredients
inches ginger piece2
cauliflower1 medium
Salt to taste
turmeric powder¾ tsp
vinegar4 tbsps
Oil2-3 tbsps
cumin seeds1 tsp
green chillies3
red chilli powder1 tbsps
medium tomatoes, roughly chopped2
chopped fresh coriander leaves2 tbsps
ginger paste2 tbsps
lemon juice½ tbsp
Method
1.Cut cauliflower into small florets. Place them in a bowl, add water enough to soak the completely along with salt and ¼ tsp turmeric powder.
2.Thinly slice ginger and soak them in vinegar.
3.Heat oil in a non-stick pan. Add cumin seeds and sauté till lightly browned. Slit green chillies and add along with ginger paste and sauté till fragrant.
4.Drain the cauliflower florets and add and sauté. Add remaining turmeric powder, red chilli powder and salt and mix. Cover and cook, stirring at regular intervals, till half cooked.
5.Roughly chop tomatoes and add. Add 1 tbsp water and mix.
6.Drain and add more than half the ginger slices soaked in vinegar and mix. Cook on high heat till the cauliflower is done.
7.Chop fresh coriander and add and mix well.
8.Transfer into a serving bowl. Sprinkle lemon juice and remaining ginger slices and serve hot.
