Samba Tiger Prawns

Ingredients
Tiger prawns

Onions
2 medium
Olive oil
5 tablespoons
Garlic,peeled
6 cloves
Green capsicum,diced
1 large
Salt
Crushed red chillies
1 teaspoon
Coconut milk
2 cups
Tomatoes,diced
2 medium
Fresh coriander leaves,roughly chopped
2-3 tablespoons
Steamed white rice
2 cups


Method
Quarter the onions and separate the layers.

Heat olive oil in a pan. Add onion, garlic cloves, green capsicum and sauté. Shell and clean twelve prawns, halve them vertically and add to the pan. Stir and cook.

Clean the remaining prawns but do not shell them. Add them to the pan too. Add salt and crushed red chillies and stir. Add coconut milk and mix.

Add tomatoes and roughly chopped coriander leaves. Cover and cook till done. Serve them over a bed of rice.
