Grilled Fish With Salsa

Ingredients
Surmai (king fish)8 darnes
Saltto taste
Lemon juice3 tablespoons
Malt vinegar2 tablespoons
English mustard paste2 tablespoons
Ginger-garlic paste1 tablespoon
Red chilli sauce1 tablespoon
Cloves16
For salsa
Corn niblets1/2 cup
Fresh basil leaves10-12
Onion ,roasted and finely chopped1 large
Garlic,roasted and finely chopped4-5 cloves
Tomatoes,chopped2 medium
Canned pineapple,chopped2 slices
Jalapeno,finely chopped1
Saltto taste
Lemon juice1 tablespoon
Fresh coriander leaves,finely chopped2 tablespoons
Method
Marinate fish darnes in salt, lemon juice, malt vinegar, English mustard paste, ginger- garlic paste, red chilli sauce for half an hour. Pre-heat grill. Stud marinated darnes with cloves, place them on hot grill and cook for eight to ten minutes (or until fish flakes easily with fork) turning once. Do not overcook the fish. Remove cloves. To make salsa, cook corn niblets with half cup of water on Microwave HIGH (100%) for one minute. Drain. Tear basil leaves with hand leaving aside a few for garnish. Mix together corn, onion, garlic, tomatoes, pineapple, jalapeno pepper, salt, basil leaves and lemon juice. Mix well and add chopped coriander leaves. To serve: place salsa on a plate. Place grilled fish over it and garnish with reserved basil leaves
